Vanishing Oatmeal Raisin Cookies

Vanishing Oatmeal Raisin Cookies AKA - Joe's Concert Cookies 
I most often use this variation, making one large cookie and attempt to cut it into 1 inch cubes to try to get the dosage a bit consistent. You can substitute GOOD butter or Coconut Oil for the butter. I also often substitute a variety of dried fruits, blueberries, cranberries along with the raisins - I mince them and sometimes I leave out the chocolate chips.
MAKES 24 cookies 

Ingredients
1/2 (8T-1 stick) cup butter, softened
1/2 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 egg
1/2 teaspoon vanilla
3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups Quick Oats, uncooked
1/4 cup raisins
1/2 cup mini semi-sweet morsels

Directions
​Heat oven to 350°F. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well.

FOR DROP COOKIES > Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.

FOR BAR COOKIES: Bake 25 min + in a 8x8 metal pan - test with a toothpick - let cook completely, turn out onto a cutting board, cut some cubes and eNJoy
