Lefty's Sausage Bread

Deadicated to my Father - Joe Lefty Rizzo

MAKES 2 Large Loafs

Ingredients
1 large yellow onion - chopped
2 lbs. Italian Sausage (Hot and Mild) Remove from casing
1 1/2 lbs. Mozzarella Cheese - Cut into cubes
1 cup Fresh Grated Parmesan/Romano cheese
1 cup Asagio cheese, grated
3 Large eggs( Separate the yolk of one egg to brush on top)
Optional: Fresh parsley, oregano, salt & pepper
I added finely chopped chili peppers to the HOT one, didn't mix the two types of sausage
2 lbs. pizza dough (either made in bread machine or store bought)

Directions 
Cook sausage and onion in frying pan. In large bowl combine sausage and onions (sausage should be broken up into small pieces), mozzarella, grated cheese and 2 whole eggs and 1 white. (save the one yolk for the egg wash).

Roll dough onto parchment covered cutting board, pat some light oil on the dough and stretch to a rectangle. Spread sausage mixture on top within one inch of the edge. Roll up dough like a jelly roll towards you and after the first turn place the sides over so the stuff doesn't fall out.

​Place on cookie sheet, brush top with some oil and pepper and the beaten egg yolk. Cut a few slits on top. Bake 45 minutes or until golden brown. 350 degrees
