Apple Manchego Salad

My friend Jordan Swiler is the head chef at Lurcat in Minneapolis. He showed
​me this and its super simple. The only thing I might mention is that I use Pink Lady apples and I find them to be the best, but it is your preference. Also, as it is mentioned, its important to rub the apples in a little lemon so that they do not brown. Super simple, quick, delicious, affordable. And people with think you're a hot shot.


Vegetarian and Gluten Free

Ingredients
4 firm tart apples (Jonathon, honey crisp or Granny Smith)
1/2 lemon
4 ounces Manchego cheese
1/4 cup chopped chives
1 tablespoon olive oil
2 pinches Kosher salt

Directions
Slice the apples into matchsticks (slice them into slices, then lay the slice down and cut into thin long rectangles). Toss the apples with a bit of fresh lemon juice. Cut the cheese into matchsticks. Thinly slice the chives.

Toss all ingredients with the olive oil and Kosher salt. Serve immediately.
